-Olive Garden Salad-

We made this salad for the Valentine’s Banquet and also for the Young Adult Retreat. People love it! (The camp staff do anyway…)

1 head romaine lettuce, washed and torn
1 head iceberg, washed and torn
1 small red onion, thinly sliced
sliced banana peppers (you choose the amount)
2 large tomatoes, diced (we considered these optional)
1 can whole black olives, drained
Parmesan cheese (freshly grated is best!)
Caesar salad croutons

1/2 c. mayonnaise
1/3 c. vinegar
2 tsp. olive oil
1 T. lemon juice
2 T. Karo syrup
1/4 c. Parmesan-Romano cheese
1/2 tsp. garlic salt
1/2 tsp. Italian seasoning
1/2 tsp. parsley flakes

Assemble first 6 salad ingredients in large salad bowl. Sprinkle with Parmesan and top with croutons. In mixing bowl whisk dressing ingredients together. (or shake in a pint jar with a screw-on lid.) Pour dressing over salad just before serving.
Yield: about 10-12 servings

Oh, and soggy croutons make for kind of a gross salad the next day. The second time we served this, we let people add their own.

    We had that at our wedding reception… and then I’m pretty sure Danielle’s family had leftovers of it for weeks afterwards. 🙂

      Oh yeah. I forgot to mention. This recipe came from the cookbook that you guys gave me on my birthday. And the only reason I tried the salad was that I knew from your wedding how absolutely fabulous it is!
