So you didn’t get to come to Bethel Camp for the young adult retreat this weekend; here’s a taste of what you missed out on. Or maybe you were one of the 57ish young adults that we hosted, and you were hoping to go home with the recipe for something we fixed. If so… there’s a pretty good chance you’ll find it in one of the links below.

Julia, Kendra and I figured out the menu together, spent Friday morning grocery shopping, and then put in who-knows-how-many hours preparing food and cleaning up.  And we would have spent even more hours in the kitchen if it wasn’t for all the volunteers who signed up for clean-up duty after each meal!

For all of you foodie people, here’s a copy of our weekend menu. Good old camp food – with a little bit of a grown-up twist. No pizza or chicken noodle casserole this weekend.

Friday supper:
Taco Soup
Cheddar Chowder
Zuppa Toscana
tossed salad
cupcakes by Kendra

Evening Snacks:
tortilla chips with Ro-Tel dip
hot apple cider
spiced chai
leftover cupcakes
pudding cups
Ranch Oyster Crackers

Saturday breakfast:
Stuffed French Toast
w/strawberry syrup
sausage links & patties
fresh fruit
Baked Oatmeal

Saturday lunch:
Create-Your-Own-Pasta Bar
(bow-tie pasta, fettucine, alfredo sauce, diced sauteed chicken, marinara sauce w/ground beef, sauteed mushrooms, onions, zucchini & yellow squash, pesto, parmesan cheese)
green beans
veggies & dip
garlic bread
Honey Bun Cake

Saturday Supper:
Smoked Brisket
Baked Potato Bar
(massive potatoes, butter, sour cream, cheese, green onions)
cooked broccoli
cooked carrots
tossed salad (and the leftover chicken from lunch for lovers of grilled chicken salad)
S’more Brownie Pie and ice cream

evening snacks:
Spinach Artichoke Dip
crackers, tortilla chips, veggies & dip
leftover desserts and snacks

Sunday Morning Sustenance:
Peach-Oatmeal Bread
fresh fruit
coffee, OJ

Sunday Brunch:
Quiche – with several combinations of ham, broccoli and onions
biscuits & gravy
fried apples
fresh fruit
leftover breakfast stuff

    Yum! I have been wanting a recipe like the stuffed french toast and I can’t wait to try it. It does sound like you all ate well! Gotta love the grown up version of camp food. BTW I read your blog often and love hearing about the happenings in your corner of Clayhole. Blessings to you all!
