-Cheddar Chowder-

Cheddar Chowder

4 c. boiling water
4 c. diced potatoes
3 c. sliced carrots
½ c. chopped onion
2 tsp. salt
½ tsp. pepper

White Sauce:
½ c. butter or margarine
½ c. flour
4 c. milk
4 c. cheddar cheese
2 c. chopped ham

Boil vegetables in water with salt and pepper.  Simmer 10 minutes.  In separate pan, melt butter; whisk in flour.  Add milk – slowly at first to avoid lumps.  Add cheese; stir until melted.  Heat, but don’t boil.  Add cheese sauce and ham to vegetables and water.     -serves 8-10
